Last week, I went to a renaissance fair and ate something really yummy called “Schmachtfladen” (see picture) - “schmachten” means “(to) languish” and “der Fladen” is something like “flat cake”.
Anyway, it was so yummy that I baked Schmachtfladen at home for myself - they turned out to be pretty delicious. So here’s the recipe - in case you wanna try it ;)
For about 6 servings you need:
500 g (about 1 pound) whole grain flour (e.g. wheat, rye…)
1 cube yeast (about 40 g / 1.4 oz)
375 ml (about 1.5 cups) water
1 tsp salt
about 400 g (1.5 cups) sour cream
chopped onions
sliced, cooked potatoes
Prepare a yeast dough (flour, water, yeast and salt) and let it rise for about 40mins. Divide the dough into 6 pieces and shape flat round cakes. Put them onto a baking tray.
Now it’s time for the topping. Mix the egg with the sour cream and the salt. Then spread the yeast dough cakes with the mix. Put the potatoe slices and onions on top - if you eat meat you can also add small ham or bacon cubes.
Bake the Schmachtfladen for about 20-30mins (200° C / 392 ° F). They should be crispy enough by then. GUTEN APPETIT! :) (Enjoy your meal!)
